Cupcake recipe of the Month

These cupcakes go beautifully with the Strawberry Cream Cheese Icing found in Icing Only

Simple Strawberry Cupcakes

1 cup salted butter (softened)

2 ¼ cups sugar

1 ½ teaspoons vanilla

4 extra large eggs

 

2 ¾ cup all purpose flour

1 tablespoon baking powder

1 teaspoon salt

 

1 cup 1 % milk (any type of milk is fine)

 

2 ½ cups strawberries (finely chopped)

 

Directions

 

1) Preheat oven to 350 F

 

2) Line cupcake pans with pretty liners.

 

3) In a large bowl cream butter, sugar, vanilla and eggs with an electric mixer. Beat until light colored. (3 minutes)

 

4) Place all the eggs in the bowl and beat again until they are all well blended in. Scrape the bowl with a spatula and beat again just for a few seconds.

 

5) Add the flour, baking powder and salt on one side of the bowl, then the milk on the other side of the bowl. Put your mixer on low and mix until well combined.

 

6) Stir in chopped strawberries

 

7) Bake regular cupcakes for 20 minutes, jumbo cupcakes for 25 minutes and mini cupcake for 14 minutes. They are done when they are firm to touch and slightly brown.
