A Two Turtle Cupcake Recipe

One the second day of Christmas my true love gave to me - A TWO TURTLE CUPCAKE. The cake is moist with a streak of cheescake and the icing is chocolatey and delicious. Chocolate is so much better than two live birds. My true love knows me well.

Milk Chocolate Cheesecake Cupcakes (Makes 30 regular cupcakes)
Cake
½ cup soft butter
2 cups sugar
2 cups flour
1 teaspoon salt
1 teaspoon baking powder
½ teaspoon soda
1 1/3 cups milk
1 teaspoon vanilla
1/8 cup cocoa powder
2 eggs
½ cup milk chocolate (melted and cooled)
¾ cup milk chocolate chips
Filling
¼ cup sugar
1 tablespoon cornstarch
1 tablespoon milk
½ teaspoon vanilla
1 egg
1 cup cream cheese
Directions for cupcakes
1) Heat oven to 350 F and line cupcake tins with liners
2) In a large bowl beat the butter and sugar together
3) Add the rest of the cake ingredients except the melted chocolate and chocolate chips and beat for 3 minutes. Add the melted chocolate and chocolate chips. Stir until combined.
4) In a separate bowl combine all the filling ingredients and beat until smooth.
5) Put a generous tablespoon of the chocolate batter in the bottom of each cupcake liner then a tablespoon of the filling mixture. On top place another tablespoon of the chocolate batter. The liner should be 2/3 full.
6) Bake for 30 minutes or until center is cooked.
Simple Chocolate Buttercream from ICING ONLY
1/2 cup butter (softened) 4 cups icing sugar 6 tablespoons milk or cream ½ cup cocoa powder 1 teaspoon vanilla flavouring
Directions for Icing
1. Beat butter with an electric mixer until creamy.
2. Add 2 cups of icing sugar. Beat until well combined.
3. Add the milk,cocoa powder and vanilla, then the other 2 cups of icing sugar. Beat until a smooth icing forms.
