A Homemade Gumpaste Recipe Using Gumtex

This recipe makes a strong beautiful gum paste that lasts for weeks in an airtight container.Many people complaint that the GUMTEX instructions do not work for them. I have developed new instructions that many people have said really work for them. Have fun!

Basic Gumpaste

5 1/4 cups icing sugar 1 tablespoon karaya gum or GUMTEX 1 tablespoon glucose 5 tablespoons water (4 tablespoons used first then 1 the next day)

Directions 1 tablespoon shortening (Does not go into gumpaste but is used to work with it)

1. Mix together 3 cups of icing sugar with the karaya gum powder in a medium bowl using a fork.

2. Combine 4 tablespoons of water and the glucose in a small bowl. Microwave on defrost for 30 seconds. Stir until the glucose is dissolved.

3. Stir the water/glucose mixture into the icing sugar mixture. This will not seem like gum paste but instead it will be a very soft icing like mixture.

4. Put this mixture in an airtight plastic bag or container at room temperature overnight.

5. The next day, break the mixture up into 6-8 pieces and place in a microwave safe bowl. Microwave for 30 seconds. Now mix in 1 tablespoon of water with your hands.

6. Knead in 2 1/4 cups of icing sugar. Put immediately into an airtight plastic bag or container.

Note: After kneading in the icing sugar in the last step you can now use this gumpaste. It always works better to put a small amount of shortening on your hands before you start working with the gum paste because it softens it and keeps it from drying out too quickly. You can also knead some shortening into the gumpaste if it is cracking or feeling gritty.
