Five Golden Ring Cupcake Recipe

On the fifth day of Christmas my true love gave to me FIVE GOLDEN RING CUPCAKES. My first attempt at these cupcake I thought was a failure but my friend who eats gluten free loved them so I revised them slightly and yes they do taste like an after eight mint.

Gluten Free After Eight Mint Cupcakes

½ cup melted dark chocolate ( 4 oz of bakers or 1 cup of unmelted molding wafers)

1 tablespoon vegetable oil

4 egg whites

3 tablespoons brown sugar

4 drops peppermint oil or ½ teaspoon mint flavouring

1/3 cup cocoa powder

1) Heat oven to 350 F and line cupcake tins with liners.

2) In a microwaveble bowl heat the chocolate for 1 minute or until melted. (use 10 second increments if it is not melted after one minute.) Stir in oil. Let cool for 5 minutes.

3) Beat egg whites in a separate bowl until stiff peaks form. Add brown sugar and stir.

4) Add the chocolate mixture slowly until blended and stir in flavouring and cocoa powder.

5) Fill cupcake liners 2/3 full and bake for 20 minutes. Cupcakes will shrink when they come out of the oven. (Makes 8 regular cupcakes.)

Pepppermint Cream Cheese Icing

1/3 cup butter 1 cup cream cheese 3 cups icing sugar 4 drops peppermint flavouring

1. Mix together the butter and cream cheese with an electric mixer until well combined.

2. Add icing sugar and flavoring then mix well. This icing pipes very well.
