Four Lemon Curd Cupcake Recipe

On the fourth day of Christmas my true love gave to me - FOUR LEMON CURD CUPCAKES.

The cupcake recipe on this blog entree is one of my favourite cakes. I made it for my daughter's wedding cupcakes, they froze well and people raved about them. This cupcake was filled with bought lemon curd but you could easily make your own. This is a lemon lovers dream come true.

Lemon Orange Cupcakes

1 1/2 cups butter (softened) 2 1/4 cups sugar 3 eggs 2 teaspoons grated lemon peel 2 teaspoons grated orange peel 4 teaspoons of lemon juice 1 1/2 tsp vanilla 3 3/4 cups flour 1 1/2 teaspoons baking powder 1 1/2 teaspoon baking soda 1/2 teaspoon salt 2 1/4 cups milk Directions 1 ) In a large bowl beat the butter and sugar. 2 ) Beat in eggs and lemon and orange peel . 3) Beat in lemon juice and vanilla . 4) In another bowl combine flour, baking powder, baking soda and salt . 5) Add the dry ingredients alternately with the milk using the following pattern. (Dry, wet, dry, wet, dry) 6) Place the liners in the cupcake pans and fill them 2/3 full of batter. 7) Bake for 22 minutes at 350 F Makes 36 cupcakes.

Lemon Cream Cheese Icing

1/3 cup butter 1 cup cream cheese 3 cups icing sugar

2 tablespoons lemon juice

1. Mix together the butter and cream cheese with an electric mixer until well combined.

2. Add icing sugar and lemon juice then mix well. This icing pipes well but will not hold its shape in heat and humidity.
